Corderro Begins with a Family Tradition
Jason, our founder, grew up raising lamb. His father was raised on the historic Batte Homestead—land cleared by the first Batte's to immigrate to Canada.
Butchering is deeply rooted in the Batte family, built on generations of craftsmanship and care, they are still serving the community today.
This legacy of farming and butchering laid the foundation for everything Corderro stands for.
We Realized Lamb Is Missing From Everyday Eating
Despite its rich nutrition and sustainability,
lamb was missing from everyday foods.
It wasn’t convenient. It wasn’t visible. It didn’t fit modern, on-the-go lifestyles.
We built Corderro to change that—with a snack that puts lamb where it belongs: in lunchboxes, gym bags, and on shelves everywhere.


Built Out of Frustration—and Purpose
As a father, Jason wanted real food he could trust—and give to his kids.
Tired of ultra-processed “healthy” snacks,
he rolled up his sleeves.
What began in frustration became a
hands-on journey of experimentation,
learning, and doing things the right
way—not the easy way.
Turning Tradition Into Innovation
After dozens of trials, he found the
breakthrough: a slow-fermented lamb stick
that was clean, shelf-stable, and full of
flavor.
With help from Chef Alex and a small-batch
processor, he brought it to life using simple
spices and premium cuts of lamb.
